For me, the only way to taste test pasta is to eat it plain without sauce, which is what I did. And this spinach fettuccine is remarkable. The texture of the pasta is superb and the spinach flavor, from spinach powder, is terrific! Two-ounce serving is 216 calories, zero grams of fat and sugars with 8 grams of protein. Pasta at its best! They recommend "plenty of salted boiling water" to cook in, but hey, go easy on the salt - I did, and it tasted great.

Pasta Valente introduces new label

 August 15, 2015

Coming to shelves near you soon!  Pasta Valente has had their signature red label for over 6 years, time for a change.  The new label highlights the product’s features and benefits.  The pasta is Egg-Free, Handcrafted, cooks in 3-5 minutes and comes from the Kitchens of Fran & Mary Ann Valente.  All of the important facts are now featured on the front of the package.  Each package has a “best by date” on the front for easy reading.

Pasta Valente was founded by Fran Valente.  She began Pasta Valente in 1982 at the Charlottesville Farmer’s Market.  Every Saturday she would take spinach and egg based pastas to sell and every Saturday she sold out.  Mary Ann Valente joined her mother after culinary school in Paris, France.  Together they make and sell their products to specialty stores, grocery stores and e-tailers across the United States.

. Each package has a custom easy to prepare recipe, a 2 years shelf life and easy to see the product clear bag.

Going to an EGG-Free Pasta

August 1, 2015

Effective August 2015 Pasta Valente is discontinuing all egg based pasta and eggs as an ingredient in their pasta.  The pasta will now be animal friendly, plant based, cholesterol free, fat free and egg allergen free.  The decision has been in the works for several years.  Most specialty pasta contains eggs and that is a challenge if you have allergies or other reasons to avoid eggs.

Most of the vegetable pastas have been egg free for years, now the plant is egg free.

The pasta is rolled, cut and air-dried.  This “old-fashioned” style of making pasta dates back to before Thomas Jefferson’s time.  The homemade taste and texture is unparalleled.  Because of the rolling process of the pasta, they cook in boiling water in 3-5 minutes, just like fresh pasta.  And the taste is delightful.  The flavor is in the noodle.  Toss with olive oil and fresh vegetables for a quick hot weather meal.  And in when the weather changes and comfort food is on the menu serve with peas and ham. Each package has a custom easy to prepare recipe.

Today Pasta Valente can be found in Kroger, Harris Teeter, Giant Eagle, Martin’s and Giant Food Co.

Pasta Valente is keeping the past in Pasta

In 1793 Thomas Jefferson purchased a pasta machine to install at his home, Monticello.   Fast forward to 1982 when Fran Valente started making homemade pasta in Charlottesville, Virginia for sale at the farmer’s market on Saturdays.  The pasta started catching on and was available in local retailers and specialty stores around the Virginia.  The most popular flavors are spinach, garlic-parsley, tomato basil and a combination of carrot, beet and spinach.
