Marinara my grandmother made.

Ah….Marinara Sauce…. What is it?  How do you make it?   My grandmother made 2 kinds of sauce both red sauce.  One sauce was “gravy”, it was made with meat, tomato puree, tomato paste, dried herbs, and simmered for several hours.  The other sauce was tomatoes, fresh basil, garlic and olive oil, and was ready in 20-30 minutes. I like Plum tomatoes, they don't have to be from Italy, but it doesn't hurt.  The garlic has to be fresh, firm and white.  Lastly fresh basil.     For me, it was either Marinara sauce or Gravy and both are similar ingredients but taste very...

Celebrate National Egg Month

Garlic Parsley Pasta with Asparagus and Eggs         It sounds a bit strange but it's not strange at all.  In fact, my friend Juli said it tasted like pasta with asparagus and Hollandaise Sauce.  And she is right, it does. This is a great brunch for four or a quick dinner that needs extra protein.  In any case, it's quick, tastes great and is just enough out of the ordinary to make it interesting.  And it's rich enough to satisfy everyone.   1 12 oz package Pasta Valente Garlic Parsley Fettuccine 1 lb thin asparagus, cleaned and...

Baked Shrimp Scampi with Garlic Parsley Fettuccine

I love pasta and shrimp.  In Italy it is common to have a light sauce with pasta and seafood.  Grated Parmigiana or Romano cheese is not normally served with seafood, though we prefer it here in the US.  The Dijon style mustard adds a snap and richness to the sauce, making it easy to leave off the cheese.    This is an easy spring recipe.  In fact, when it's this easy to make dinner,  its' almost like magic.   The hard part is peeling the shrimp.  The rest is easy.  To use pre-cooked shrimp see below. 1 12 oz package...

Spinach Linguine with Smoked Salmon Cream Cheese Dill Sauce

Spinach Linguine with Smoked Salmon and Cream Cheese Dill Sauce My husband says this is the best recipe I've ever made.  Full disclosure, he says that quite often.  I love smoked salmon and pasta.  It's a happy marriage.  This recipe is easy to make ahead of time.  Just make the sauce and cook the pasta at the last minutes.  If you are having a dinner party and want to start with seafood and then have a meat dish for the main course this works well. It's also great for Sunday brunch. 1 12 oz package Pasta Valente Spinach Linguine   ...
